I guess it depends on your needs, if you’re just playing back videos and don’t need frame-accurate sync it’s indeed cheaper to get a Mac Mini or add & sync other computers used as players. If you do real-time processing you’re gonna need a much powerful computer with enough gpus to support multiple screens (it’s not only a matter of cheap dongles), at one point using a dedicated device may be cheaper.

Depending on the cable lengths needed you may prefer cheaper HDMI connections or the convenience of SDI, then there’s the stability/acceptable maintenance level : one should have way less potential problems running a single video flux/file from a computer, then split to different screens, than building a cluster of various computers (that may have to stay in sync over hours/days/weeks) to achieve the same results.
