Ok, i figured out how you would connect ORCA to an Ipad via Bluetooth MIDI.
first, on your mac you go to Audio MIDI setup, and then open the tap called “window” and select “show MIDI studio”.
inside the Midi studio you will want to click on the bluetooth icon, doing so will prompt a new window called “bluetooth configuration”, here you can name your bluetooth device and click advertise.
Now on your iPad open a synth that uses bluetooth and connect to the advertised MIDI bluetooth device that you named.
finally you will want to choose the correct MIDI device in ORCA.
and now you should hear that ORCA is sending MIDI data to the iPad app.
I hope this solves at least half of your question 
Now to the other half, how would you connect ORCA to VCV rack
well, I found that the easiest way would be to just use the IAC driver for mac
Once thats done, going into VCV rack’s MIDI out module and setting its output to the IAC driver should be pretty straight forward, and then of course you also need to enable it in ORCA
